Banana Pudding

Ingredients

• Bananas, peeled & sliced – 8
• Corn starch - 1/4 cup
• Milk - 7 cups
• Butter - 1/4 cup
• Flour - 1/2 cup
• Egg yolks, beaten - 4
• Vanilla Essence- 1 tsp.
• Vanilla wafers - 1 packet
• Sugar - 2 1/2 cups

Method:

1. Mix sugar, flour, and corn starch in a bowl and set aside.
2. Pour milk into a large saucepan and cook it over medium heat.
3. Now stir 1/4th of hot milk into yolks; stir into reserved dry ingredients, and add to remaining hot milk.
4. Stir the mixture constantly and cook it until mixture thickens and coats the spoon. Remove from heat, and add in butter and vanilla to the mixture.
5. Cool to room temperature. Take the baking dish and put in with one-third of the vanilla wafers and Arrange half of banana slices over wafers; top with half of cooled custard.
6. You can repeat as many layers as you wish. Also keep some of he wafers reserved to crumble and sprinkle over custard.
